Ingredients

4 cups cooked long-grain white rice (preferably leftover)

3 tablespoons vegetable oil, divided

3 large eggs, lightly beaten

1/4 teaspoon salt

1/4 teaspoon black pepper

1 can (12 ounces) Spam, diced

1/4 cup chopped onion

1/4 cup chopped carrot

2 tablespoons soy sauce

2 teaspoons sesame oil

2 green onions, sliced

Directions

In a large skillet over medium-high heat, heat 1 tablespoon oil. Add eggs; cook and stir until set. Remove from the pan.

In the same skillet, heat another tablespoon of oil over high heat. Add Spam; cook and stir until browned, about 10 minutes. Remove from the pan.

In the same skillet, heat the remaining oil over medium-high heat. Add onion and carrot; cook and stir until tender, about 5 minutes.

Add rice; cook and stir until heated through, breaking up any clumps.

Stir in soy sauce, sesame oil, salt and pepper. Add egg and Spam; toss to combine.

Sprinkle with green onions and serve.
