Ingredients

1 kg chicken, cut into pieces
1 lime, juiced
2 tbsp oil
10 shallots, peeled and sliced
8 garlic cloves, peeled and sliced
5 tomatillos, sliced
4 red Thai chilies, sliced
3 cm galangal, bruised
3 cm kaempferia galangal, sliced
2 bay leaves
2 lemongrass stalks, bruised
250 ml thick coconut milk
250 ml thin coconut milk
1 tbsp salt
1/2 tbsp sugar
1 tsp tamarind paste, dissolved in 1 tbsp water

Directions

  1. Rub the chicken pieces with lime juice and salt. Set aside for 15 minutes.
  2. In a large pot over medium-high heat, heat oil and sauté shallots, garlic, tomatillos, chilies, galangal, kaempferia galangal, bay leaves, and lemongrass until fragrant and wilted.
  3. Add the chicken pieces and stir well. Cook until the chicken changes color.
  4. Add the thin coconut milk and bring to a boil. Reduce the heat and simmer until the chicken is tender.
  5. Add the thick coconut milk, salt, sugar, and tamarind solution. Stir well and adjust the taste as needed.
  6. Cook until the sauce is slightly thickened.
  7. Serve hot with steamed rice.
