Ingredients

For the soup:

  • 500 grams of beef shank, cut into bite-sized pieces
  • 2 liters of water
  • 2 stalks of lemongrass, bruised
  • 3 bay leaves
  • 2 kaffir lime leaves
  • Salt and sugar to taste

For the spice paste:

  • 10 keluak nuts, soaked overnight, cracked open and scraped
  • 6 shallots, peeled and chopped
  • 4 cloves of garlic, peeled and chopped
  • 3 candlenuts, roasted
  • 2 cm of ginger, peeled and chopped
  • 2 cm of galangal, peeled and chopped
  • 1 teaspoon of coriander seeds, roasted and ground
  • 1/2 teaspoon of turmeric powder
  • 1/4 teaspoon of cumin powder
  • 2 tablespoons of oil

For the garnish:

  • Fried shallots
  • Lime wedges
  • Sambal oelek (chili paste)
  • Salted duck eggs, boiled and halved (optional)
  • Bean sprouts (optional)

Directions

  1. In a large pot, bring the water to a boil. Add the beef, lemongrass, bay leaves, kaffir lime leaves, salt and sugar. Simmer until the beef is tender, about 1.5 hours. Skim off any foam that rises to the surface.
  2. In a blender or food processor, blend all the ingredients for the spice paste until smooth. You may need to add some water to help the blending process.
  3. In a skillet over medium-high heat, heat the oil and fry the spice paste until fragrant and the oil separates, about 15 minutes. Stir frequently to prevent burning.
  4. Add the spice paste to the pot of beef soup and bring to a boil. Lower the heat and simmer for another 15 minutes to let the flavors meld.
  5. Serve the soup hot with steamed rice and garnish with fried shallots, lime wedges, sambal oelek, salted duck eggs and bean sprouts if desired.
